This is because sprouts indicate that your potatoes contain a higher concentration of harmful chemicals than fresh potatoes.

When conditions are correct, potatoes sprout. If your potatoes are in a well-lit section of the kitchen, alongside onions, or after being in the fridge, they'll get "eyes."

To avoid this, you may be tempted to keep your potatoes in the coolest part of the house, but this is a mistake. When cooked, starches can convert to sugar and produce hazardous chemicals.
