How To Make Starbucks Pumpkin Loaf at Home

1/3 cup of sunflower oil
3/4 cup maple syrup
2 eggs
1 cup 100% pumpkin puree

1 tsp vanilla extract
1/4 cup plain non-fat Greek yogurt
1 cup unbleached all-purpose flour
3/4 cup whole wheat flour

2 tsp pumpkin pie seasoning
1 tsp baking soda
1/4 tsp salt
2-3 Tbsp pepitas

Step 1. Whisk the wet ingredients

Preheat the oven to 350°F. While the oven preheats, whisk together the oil and maple syrup. Add eggs, pumpkin puree, vanilla essence, and Greek yoghurt. Blend well.

Step 2. Whisk the dry ingredients

Mix whole wheat flour, pumpkin spice, baking soda, and salt.

Step 3. Fold the ingredients together

Fold dry ingredients into wet until just blended. Lumps are OK!

Step 4. Place in a loaf pan and top with pepitas

Butter or oil a loaf pan. Smooth the pumpkin loaf batter in a buttered pan. Top the bread with pepitas.

Step 5. Bake for
50-60 minutes

Bake until a toothpick comes out clean, 50 to 60 minutes. Cool for 5 to 10 minutes before transferring to a wire rack. Serve.
